Craftsmanship at its finest

Sourdough has always been the beating heart of Le Pain Quotidien. Even now, time, allowing the dough to rest for 48 hours, is an indispensable ingredient.

With this new bread, we start our artisanal process with the grains themselves. We sprout them, transforming the grain from a seed into the beginning of a plant. Just short of a new plant, because the sprouting process is stopped at the right moment. After sprouting, we ferment the grains for a few more days.

Delicious and nutritious

Why do we do this? So you can enjoy our dishes with us carefree. Our bread already contains many vitamins and minerals. The sprouting process ensures that even more nutrients are released. Natural sugars also emerge, giving our bread a unique, soft taste. Did you know that our sprouted rye bread contains the most natural sugars of all our breads?

Better Choices

Eating enough fibers per day is an important part of a balanced diet. All our breads, from our classic white bread to our cannabis-hemp bread, are a source of fiber. We attach great importance to eating enough fiber. That’s why it’s one of our “Better Choices” criteria.
